Abstract

Seven cultivars viz., Krishna, Kanchan, Narendra Aonla-6, Narendra Aonla-7, Narendra Aonla-10, Francis and Chakaiya were evaluated for their suitablity for making aonla squash during 2004–05. The squash was prepared by adopting standard procedure. Among the seven cultivars of aonla Narendra Aonla-7 was found most suitable for making squash followed by Narendra Aonla-6. The shelf-life of squash was assessed upto one year at 30 days interval. There was a linear increase in total phenolics content and decrease in ascorbic acid as well as organoleptic quality with increased duration of storage.
