Abstract

The study was carried out at Horticulture Research Block of G.B. Pant Uni. of Agric. and Tech., Hill Campus, Ranichauri, Tehri Garhwal (Uttaranchal). The apple cultivars belonging to standard, spur and colour mutant groups were evaluated for their various physico-chemical attributes. The findings revealed a wide range of variation in their physico chemical attributes. The largest fruit size (6.38 x 7.69 cm) was exhibited by spur type cultivar Red Spur and volume (202.30 ml) by standard type cultivar Royal Delicious. The maximum firmness (19.60 Ibs), reducing sugar(6.98%) and T.S.S (13.50° Brix) were noted in spurtype cultivar Red Chief, while the highest percentage of total sugar (8.45%), non-reducing sugar (2.19%) and T.S.S: acid ratio (67.63) were recorded in cultivars Vance Delecious, Starkrimson and Royal Delicious, respectively.
