Tatary buckwheat (Fagopyrum tataricum Gaertn.) contains protein, polyphenols, vitamins and minerals. It has great potential as a nutritional, healthy and functional food. The concentration of potassium, phospohorus, magnesium, calcium, sodium, iron, zinc, manganese and copper in dry, mature grains of 12 genotypes from sangla region of Himachal Pradesh were studied by flame atomic absorption spectrophotometer. The results revealed that wide variations in potassium (K), phospohorus, (P) magnesium(Mg), calcium (Ca), sodium (Na), iron (Fe), zinc (Zn), manganese(Mn) and copper (Cu), ranged from 396.3 to 488.8 mg/100g, 233 to 369.8 mg/100g, 120.3 to 147.1 mg/100g, 12.2 to 27.2 mg/100g, 14.4 to 17.6 mg/100g, 2.1 to 6.2 mg/100g, 1.8 to 3.6 mg/100g, 0.6 to 1.2 mg/100g and 0.2 to 0.57 mg/100g, in that order. Therefore, distinct genotypes with high concentration of minerals should be effective for the development of special buckwheat varieties and improvement of its food nutritional quality.
