Abstract

The nutritional survey was conducted on pomegranate fruit orchards at different locations in Chittorgarh district of Rajasthan. The average pooled fruit weight of pomegranate varied from 168.95 to 196.72 g per fruit with the mean value of 185.65 g/fruit. The pooled average aril per cent age varied from 67.56 to 73.26. The pooled seed content varied from 9.68 to 10.24 per cent age. The pooled peel per cent age ranges from 35.43 to 42.95. The pooled juice content varied from 42.65 to 55.68 per cent age. The fruit yield per tree of pomegranate ranged from 13.71 kg plant−1 to 21.75 kg plant−1. The pooled total soluble solids content ranged from 13.62° to 15.26° Brix and total acidity varied between 0.405 to 0.420 per cent. The TSS/acidity ratio varied 32.43 to 37.68. The pooled ascorbic acid content varied from 11.92 to 13.85 mg/100 ml pulp. Total sugar and reducing sugar varied 7.81 to 8.53 per cent and 4.91 to 5.43 per cent, respectively.
