Studies on pectin extraction from kinnow peel and pomace

Abstract

Pectin was extracted from dried kinnow peel and pomace using water acidified with HNO3 at varying temperature (40–80°C), time (10–90 min) and pH of solution (1.25–2.25). Pectin yield was found to be more in peel than in pomace irrespective of extraction conditions. Extraction temperature, time and pH markedly affected the yield of pectin. Yield of pectin increased with increase in temperature up to 60°C followed by slight decrease at 80°C. Significant decrease in yield of pectin was found for extraction solution with pH more than 2.0. At a constant pH and temperature, pectin yield increased with increase in extraction time up to 70 min and then decreased. Maximum yield of pectin was found to be 16.1% in peel and 6.2% in pomace at temperature 60°C, pH 1.75 and extraction time of 70 min.
