Organoleptic and physico- chemical characteristics of baby corn of promising maize genotypes

Abstract

Three maize genotypes (Sheetal, Buland and Pratap-1) recommended for cultivation during winter season were evaluated for organoleptic and physico-chemical properties (moisture (%), protein (%), total mineral (%), total sugars(%) and colour) of baby corn. All the three genotypes exhibited physico-chemical parameters within the acceptable range. Sheetal and Partap-1 were on a par in respect of organoleptic and physico-chemical parameters. Out of three picks obtained from same trial, the quality of first pick ears was best followed by second and third pickings.
