Experiments were carried out on storage of peas (variety Pb-87) with the objective to enhance their shelf life. The peas were packaged in high-density polyethylene packages of 0.025 mm thickness. The shelled peas were stored at temperatures of ambient, 15, 5 and -11°C for about 4, 7, 17 and 45 days, respectively considering their physical condition and organoleptic characteristics. The shelf life of shelled peas packaged in high-density polyethylene was found as 4, 7, 17 and 45 days, when stored at the temperatures of ambient, 15, 5 and -11°C, respectively, considering the quality indices like total water soluble sugars, protein, physiological weight loss and decay. The water vapour transmission rate of the high-density polyethylene poly-film was also determined and was observed that it increased with increase in temperature.
