Milling performance of four sugar mills in the state of Punjab during crushing season of 1995–96 have evaluated in terms of brix of juice extracted at the various mills in the milling train. Bagasse pol % has been the main criterion used for estimating the milling performance in the sugar mills. From the study, it was recommended that juice brix diagram should be prepared on daily basis so that performance of each mill of the milling tendom in the sugar mill may be monitored and pressure on the rollers, its opening and speed be adjusted to bring it in line with the theoretical values. This not only help to reduce bagasse pol but also to improve sugar recovery.
