Comparative physico-biochemical and albumen polymorphism studies in some backyard poultry eggs

Abstract

We investigated egg yolk and albumen for protein, cholesterol, zinc, iron, copper, manganese and potassium from three breeds of backyard poultry. CARI Shyama contained significantly higher percent of albumen (58.57±2.36) than Black Rock (51.74±1.14) and showed lower percent albumen volume than that of Gramapriya (68.47±1.20), Vanaraja (62.50±1.19) and native chickens of Northeastern India (6S.86± 0.39). Black Rock (48.26±1.l4) recorded significantly higher percent of yolk as compared to CARI Shyama (41.43±2.36) (P<0.05). The egg volume of Black Rock variety in the present study not only recorded higher than those of Kalinga Brown and CARI Shyama, but also the percent yolk volume of Black Rock eggs was significantly higher than that of Kalinga Brown and CARI Shyama breeds. Protein content in egg white was similar (P > 0.05) in eggs ofKalinga Brown (l0.47±0.46), Black Rock (l0.47±0.38) and CARI Shyama (l0.13±0.30). Black Rock egg contained highest cholesterol (981.82±16.34) followed by CARI Shyama (963.64 ± 11.26) and Kalinga Brown contained the least (627.31±11.98). Electrophoretic mobility of egg white proteins of three poultry breeds resolved into 8 bands each. CARI Shyama and Black Rock had the highest percentage (87.S%) of similarity with respect to egg white proteins.
